Baharat is a spice used in quite a few Middle Eastern Dishes. The depth of flavour it adds to meat, vegetables and even rice is beautiful
It is a simple mix and can be made and kept in an airtight container for a couple of months.
Baharat
Ingredients
1 tablespoon black peppercorns
1 tablespoon cumin seeds
2 teaspoons coriander seeds
1 teaspoon whole cloves
½ teaspoon cardamom seeds
1½ tablespoons paprika
1 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
Instructions
Dry roast the whole spice in a small frying pan over medium-high heat until they become very fragrant stirring to ensure they don't burn..
Remove from heat and once cooled grind a fine powder along with the paprika, cinnamon and nutmeg.
Store in an air tight container in a cool place
