After trying out various recipes I found online, I finally settled on this one as the best. With most of the other recipes a cooking thermometer is needed to keep track of the temperature of the sugar and they seemed extremely cubersome.
This recipe does'nt call for anything special nor is it time consuming. The fudge set really well and tastes good.
1/2 cup cream
1 cup sugar
1/2 teaspoon salt
1 3/4 cups mini marshmallows
3 tablespoons unsalted butter
1 1/2 cups semisweet chocolate chips
1/2 teaspoon pure vanilla extract

Line a brownie dish with parchment paper and brush with butter
Combine sugar, salt, butter, cream, and marshmallows in a heavy-bottomed medium saucepan.
Cook over medium heat, stirring, until butter and marshmallows are melted
Bring mixture to a boil stirring occasionally, for 5 minutes. The mixture will start coming away from the sides of the pan.
Add chopped chocolate and vanilla to saucepan. Use chocolate chips [I did'nt so did not get a glossy look on the fudge]
Stir until chips are melted and combined.
Pour this fudge mix into the pan.
Cool fudge in the pan, before cutting into squares.
