Chocolate Mousse

I don't seem to have posted my chocolate mousse recipe.  Wonder why ?






     225 gms dark chocolate
     1 tsp coffee dissolved in 1/4 cup water
     1 tbsp butter
      3 eggs separated


       Separate the egg white and yolks.
       Beat egg whites till stiff

       Using a double boiler melt the chocolate.
       Add in the butter and coffee and mix well
        Remove from heat and mix in the egg yolks.

       Once incorporated fold in the egg whites, taking care not to deflate them.
        Pour into individual servings and keep to chill and set
